An unopened vacuum pack of smoked salmon keeps up to 14 days in the refrigerator, or until the date printed on the package, and about 2 months in the freezer. Those are the figures for smoked fish in FDA's refrigerator and freezer storage chart. Once you open the pack, the clock gets much shorter: plan to finish it within a few days.
Smoked salmon is expensive and it rarely gets used in one sitting, so it's worth knowing exactly how long that half-eaten pack is good for. Here's the short version, the reasons behind it, and how to store, freeze and use up the rest.
The short answer
Unopened smoked salmon, fridge (40°F or below): up to 14 days, or the date on the package. Go by the printed date when there is one, and follow any "use within X days of opening" line on the label. Opened smoked salmon, fridge: a few days. NTRLY's kitchen tracker, which follows USDA FoodKeeper guidance, counts 5 days for an opened pack. Smoked salmon in the freezer: about 2 months for best quality, per FDA. Canned or shelf-stable smoked salmon: in the pantry until opened, then 3 to 4 days in the fridge, the FDA chart's figure for opened canned seafood. On the counter: no more than 2 hours, or 1 hour above 90°F.
These windows apply to cold-smoked salmon (nova, lox, the thin slices sold in vacuum packs) and to hot-smoked salmon (the thick, flaky fillets) that is sold refrigerated.
Why an opened pack goes off so much faster
Most smoked salmon in U.S. stores is cold-smoked. It's cured in salt, then smoked at a low temperature, so it is never actually cooked. The salt, the smoke and the airtight vacuum pack are what keep it good for two weeks. Once you cut the pack open, air gets in, the fish starts to dry out, and anything on your knife, fingers or cutting board gets a foothold.
That's why the date on a sealed pack stops meaning much the moment you open it. Count from the day you opened it, not from the printed date.
How long does smoked salmon last after the use-by date?
If the pack is still sealed and the date has passed, the cautious answer is to throw it out. Ready-to-eat foods like smoked fish aren't heated again before you eat them, so there's no cooking step to make up for a pack that has sat too long. If you won't get to a sealed pack before its date, move it to the freezer while it's still in date.
How to store smoked salmon
Keep your fridge at 40°F or below. FDA recommends a refrigerator thermometer to check, because the dial setting doesn't tell you the real temperature.
Store it on a shelf in the back, not in the door. The door is the warmest spot in the fridge and warms up every time you open it.
Rewrap it tightly. After opening, press plastic wrap right against the slices, then put the pack in a zip-top bag or a container with a lid. Less air means the fish stays moist and doesn't pick up other smells, and your fridge won't smell of smoked fish either.
Use clean utensils. Lift slices out with a clean fork rather than your fingers so you're not adding bacteria to the rest of the pack.
Write the date on it. Mark the day you opened it on the bag. A pack that gets pushed behind the milk is easy to forget.
Don't leave it out. FDA's seafood safety page says never to leave seafood out of the refrigerator for more than 2 hours, or more than 1 hour when it's above 90°F. For a brunch spread, keep the platter in the fridge until people sit down, or serve it on ice if it will be out longer than 2 hours.
Can you freeze smoked salmon?
Yes. Smoked salmon freezes well, and FDA's chart gives it about 2 months in the freezer for best quality. Frozen food stays safe indefinitely at 0°F, but the texture and flavor fade over time.
A sealed vacuum pack can go straight into the freezer. For an opened pack, lay sheets of parchment between portions so you can take out a few slices at a time, then wrap it tightly and put it in a freezer bag with the air pressed out. Write the date on it.
Thaw it in the refrigerator overnight, as FDA recommends for seafood, not on the counter. Thawed smoked salmon is a little softer and wetter than fresh, so it's at its best in dishes where texture matters less, like scrambled eggs, pasta or a spread, rather than draped on a bagel. Once thawed, use it within a few days and don't refreeze it.
How to tell if smoked salmon has gone bad
Throw it out if you notice a sour, rancid or strongly fishy smell (fresh smoked salmon smells of smoke and the sea, not ammonia), a slimy or sticky surface, dull, dry or discolored patches, mold, or a vacuum pack that has puffed up or lost its seal.
Don't rely on smell alone, though. The bacteria that cause food poisoning often don't change how food looks or smells, so a pack that's past its window should go even if it seems fine. When in doubt, throw it out.
Who should skip cold-smoked salmon
FDA lists refrigerated smoked seafood, including salmon labeled "nova-style," "lox," "kippered" or "smoked," among the foods that people who are pregnant, young children, older adults and people with weakened immune systems should avoid unless it's cooked into a dish such as a casserole. Canned or shelf-stable smoked seafood is fine for them. Heating smoked salmon until it's steaming hot, in an omelette or a quesadilla, is one way to keep it on the menu. If you're not sure whether this applies to you, ask your doctor.
Smoked salmon and protein
Smoked salmon is an easy protein add-on. USDA's FoodData Central lists smoked chinook salmon at 18.3 grams of protein per 100 grams, so a 2-ounce serving adds about 10 grams. It's salty, though: the same entry lists 672 mg of sodium per 100 grams, and lox is much higher. For more on daily targets, see how much protein you need.
Quick ways to use up an opened pack
The best way to beat a 5-day window is to plan two or three meals around the pack the day you open it. Ideas from our recipe collection: the classic smoked salmon and cream cheese bagel, smoked salmon and avocado toast, a spinach and feta omelette with smoked salmon, an egg and smoked salmon breakfast quesadilla, a two-minute microwave egg and smoked salmon breakfast bowl, Greek tzatziki and smoked salmon wraps for lunch, or smoked salmon and cream cheese roll-ups for a snack.
Hard-boiled eggs go well with smoked salmon too; here's how long hard-boiled eggs last in the fridge. For everything else you're keeping cold, our freezer storage guide and best before vs. use by explain what the dates really mean.
Keeping track without remembering dates
Five days goes fast when the pack is hiding behind the leftovers. NTRLY's Kitchen keeps your fridge, freezer and pantry in one list. Add smoked salmon and you get a countdown based on food safety guidance, with a reminder before it runs out of time, so the rest of the pack becomes tomorrow's breakfast instead of trash.
